BBQ Brunch

Being an Aussie, a few things beat a good BBQ brunch.

  • Sausages
  • Bacon
  • Onion
  • Tomato
  • Eggs
  • Champagne
  • Kidney
  • Fresh Bread
  1. Cook the whole lot up
  2. serve with *fresh* orange juice or chilled champagne
  3. enjoy it with the company of friends

Warm Avocado Salad

  • 3 medium avocados

  • 1 medium tomato

  • 4 bacon rashers

  • 1 red onion (optional)

  • 1 red capsicum

  • 3 shallots

  • 2 teaspoons of sugar

  • 2 teaspoons of sweet chilli sauce

  • 2 tablespoons balsamic vinegar

  • 1 cup grated cheese

  • 1/2 cup of parmesan (optional)

 

  1. Preheat oven to 180ºC
  2. Cut avocados in half and remove seeds
  3. Scoop out two thirds of the flesh and retain the shells in good condition
  4. chop capsicum, tomato, shallots, onion all into reasonably fine pieces
  5. mix capsicum, tomato, shallots, onion in a bowl until evenly distributed
  6. in a jar, make a sauce from the vinegar, chilli sauce and sugar (shake very well)
  7. place the mixture of capsicum, tomato, shallots, onion  in a food processor  and pour sauce over and let stand
  8. trim bacon and grill until crisp.
  9. chop bacon into reasonably fine pieces and add to food processor
  10. pulse in food processor for 3 seconds
  11. spoon filling into avocado halves.
  12. top with grated cheese and parmesan
  13. place all avocado halves in a baking tray and bake for 7 - 10 minutes
  14. serve with crackers or toast quarters

 

Pork Steaks with Grainy Mustard cream

Prep time:15 mins
Cooking time 12 mins Serves: 6
  • 6 Pork Butterfly Steaks
  • 3 tablespoons plain flour
  • 1/2 teaspoon ground black pepper
  • 1/4 cup oil 1 medium onion, finely chopped
  • 3/4 cup orange juice
  • 1 chicken stock cube, crumbled
  • 1 teaspoon soy sauce
  • 2 teaspoons seeded mustard
  • 1 teaspoon cornflour
  • 1/3 cup sour cream

 

 
  1. Trim meat of excess fat & sinew. Combine flour and pepper on a sheet of greaseproof paper, shake steaks in the seasoned flour until lightly coated, shake off excess.
  2. Heat 2 tablespoons of oil in a heavy based frypan: add meat. Cook over a medium heat 2-3 minutes each side or until tender, turning once. Remove from pan, drain on paper towels.
  3. Heat remaining oil in pan. Add the onion, stir over medium heat 3 minutes or until soft. Add half juice, stock cube, soy sauce & mustard, stir until combined. Blend cornflour with remaining juice until smooth, add to pan. Stir over low heat until sauce boils & thickens. Remove from heat, cool slightly. Add sour cream, stir until smooth.
  4. Return meat, heat through & serve.

Home made Bailey's

  • 1 Can Sweet Condensed Milk
  • 300 ml Carton non thickened cream
  • 1 Lg Egg
  • 2 Tbsp Choc Topping
  • 1 tspn coconut essence
  •  1 cup (250ml) Scotch

 

  1. Beat egg till thin (This is important, has to be fluid)
  2. Add cond milk & beat (This adsorbs the egg)
  3. Add cream, topping, coconut and beat
  4. Add scotch and beat lightly
  5. Chill and serve!
